Project 2 explores the biocontrol of bacteria in food by the application of phages directly onto the surface of food. A cocktail preparation of phages that can be applied in a spray format will be characterized, tested for efficacy, and compared against the leading agent for biocontrol of food-borne pathogens.

The general objective of the project is to develop a phage product to be used as biocontrol agent for foodborne pathogens

Specifically, it aims the following:
1. To isolate bacteriophages capable of lysing Salmonella enterica, and Listeria monocytogenes;
2. To characterize the isolated bacteriophages using plaque morphology, Transmission Electron Microscopy, Host range, Effect of pH and Temperature;
3. To determine the efficiency of the isolated bacteriophages as cocktail preparations in reducing the number of Salmonella and Listeria in selected food models at two temperatures (4 and 25 °C);
4. To screen isolated phages as candidates for therapeutic use in a cocktail preparation and compare their activity to the leading agent for biocontrol of food-borne pathogens; and
5. To develop a phage product containing a cocktail of phages that can be applied by the spray type method for application in raw and/or processed meat.

7. Partnership with technology adoptors: Gourmet Farms, Inc. (Silang, Cavite), and Magnolia, Inc. (Gen. Trias, Cavite; Sta. Rosa, Laguna)
